Some foods are just worth the time, energy, and to be honest, the calories. These delicious, decadent meat candies are one of those treats you deserve in moderation! I’ve tried this a few different ways but I always come back to Malcolm Reed’s core recipe on How to BBQ Right. Finishing these treats in a bath of butter, honey and sugar till they get sweet, sticky and unbelievably tender? That’s joyful eating.
Pork belly is uncured, un-smoked, and un-cut bacon. This stuff is hella cheap in my opinion. The 8 lb slab I bought for this video was $22.

Smokey, sweet, sticky meat candies that melt in your mouth? Yes, please. 1. Prepare your smoker to burn around 250 to 275. I recommend a couple pieces of Pecan and Cherry wood. You can also bake these in the oven, low and slow, at 275. 2. Cut your pork belly into 1.5 inch cubes. 3. Season all sides with your favorite bbq. I highly recommend Meat Church Honey Hog for this recipe. 4. Put your Pork Belly into the smoker. How To BBQ Right suggests putting the cubes on a cooling rack then into the smoker which makes a ton of sense but my rack wouldn't fit so I put them directly on the grate. 5. Smoke/bake pork belly for 2 hours until you get a nice color on the outside. 6. Place each pork belly into an aluminum pan and cover with brown sugar and honey. Scatter butter slices across the top. 7. Cover tightly with aluminum foil and smoke another 1 1/2 hours around 275. When baking I needed two hours total. What you are looking for are tender meat candys. 8. Transfer pork belly to new pan and drizzle with your favorite bbq sauce. I'm a big fan of Sweet Baby Rays. Toss and put back into the heat uncovered for another 5-10 minutes. Pork belly goes a long way, especially if you are cooking those 8 lb slabs. My son loves them a few days later on a Hawaiian roll as a great little sandwich!Pork Belly Burnt Ends
